As for his fabulous recipe i’m sharing with you today…
This was one of those recipes I created on a whim.
Usually I plan out what I’m going to make, make a list and go to the store.
This time, I looked in the cupboard, and challenged myself to NOT go to the store.
And VOILA…I made something with what I had!
I actually do this all the time, but I never do it for the blog posts, I don’t know why!?
I bought coconut cream from Trader Joe’s probably 1 to 2 months ago with the intention to experiment with it right away, and well, I didn’t touch it.
I used to L.O.V.E. peaches and cream oatmeal when I was little. My mom would always buy a multi-pack of flavors – strawberry, blueberry and peaches and cream. I loved them all.
Oatmeal is usually my go-to breakfast because I always have it on hand. I eat it especially on days when i’m out of yogurt!
I prefer steel cut oats instead of rolled oats for oatmeal, not sure why!
If you haven’t tried them, you should.
Gone are the days of buying flavored oatmeal packets. We can all do without the artificial flavors, preservatives…all that junk.
Add some cinnamon, maple syrup and a pinch of salt.
This Peaches and Coconut Cream Steel Cut Oats recipe is a dead winner in the oatmeal category.
A big ole’ bowl of healthy breakfast perfection.
Coconut Cream is rich and thick and the perfect pairing with peaches! I don’t know how I went so long without trying it!
Now I can’t stop thinking about what else I can make with coconut cream…
Here’s the recipe, Enjoy! 🙂
- ¼ C. Organic steel cut oats (or rolled oats)
- 1 C. Water
- 1 Peach, diced
- 2 Tbsp. Coconut cream
- 1 Tbsp. Pure maple syrup
- ¼ Tsp. Vanilla
- ⅛ Tsp. Cinnamon
- Pinch of Salt
- Cook oats as directed in small bowl (I prefer stovetop instead of microwave.)
- Wash, peel and dice peach while oats cook.
- When oats are done, let stand for 1 minute. Add peaches (save a few to garnish), cinnamon, vanilla, maple syrup and only 1 Tbsp. coconut cream (save rest for top.)
- Stir to compine. Add extra peaches to top, and the last 1 Tbsp. coconut cream to top. Lightly incorporate. Serve immediately.
