Lemon & Ginger Mascarpone Fruit Dip

No more buying a tub of fruit dip for a Summer party ladies and gentleman –  because you can make your own! I’ve got just the recipe you need that tastes amazing with any fruit! This unique Lemon & Ginger Mascarpone Fruit Dip uses ultra creamy Italian mascarpone cheese, plain greek yogurt, fresh lemon juice, fresh ginger root and honey to sweeten.

 It’s Summer y’all. Ok well, not “officially” but lets be real. It’s June 2nd and memorial weekend has long come and gone. The weather is warm and a lot of the kiddos are already out of school.

With it being Summer, comes F-R-U-I-T…and a lot of it!

Such a typical thing to eat at a BBQ, on the boat, at a grad party, or whatever it might be….sweet, light and not an ounce of guilt after you eat too much of it (well at least I don’t feel guilty!)

I definitely LOVE fruit plain…I don’t think it needs anything added most of the time. Key word, most of the time.

I’ve always been a sucker for a good fruit dip.

And I seem to only have had it out of a tub, from the grocery store. Whomp whomp.

Time to change things up!

I choose to add ginger, first off cause I love it! Secondly, I thought it would add a nice twang to the dip.

And voila! That’s exactly what it did!

Ginger goes so well with both sweet and savory dishes.

Plus, I only wanted to add simple and fresh flavors. After all, whats exciting about adding plain sugar and vanilla to mascarpone cheese? Lame. Been there, done that.

This Lemon & Ginger Mascarpone Fruit Dip has that extra something that will leave you hooked for another bite!

When my sister’s Kristin and Katie both tried it, they loved it SO much they were eating it by the spoon…

Lemon & Mascarpone Fruit Dip

  • 1 C. Mascarpone Cheese
  • 1/2 C. Plain Greek Yogurt
  • 1 Tbsp. Fresh Lemon Juice
  • 2 Tbsp. Honey
  • 1/2 Tsp. Fresh Grated Ginger
  • Assorted Fruit of your choice

1. In a medium bowl, mix all ingredients together except fruit until well combined. Add more of any flavor you think is necessary. Serve immediately with fruit, or store in fridge until fruit is ready.imageimage
