Everyone needs a signature salad they can whip up to accompany any meal, fits right on your plate and tastes amazing…but most of all SIMPLE. Simple flavor and simple ingredients – that’s exactly what {Creamy Balsamic} Simple Side Salad is!

So here’s the thing about this particular salad….

You know in some higher quality restaurants, they offer a side salad placed right on the plate, usually just some fancy greens highlighting an amazing house made vinaigrette….super SIMPLE right?

Well let me tell you – i’m a HUGE fan of these side salads.

Generally speaking, I tend to overcomplicate everything (oops!), even food. Sometimes I get overwhelmed with what to even make for dinner without having the same thing over and over again. That’s boring folks!

I always seem to overlook easy things to make…like a simple salad.

Usually I pile my salad sky high with veggies, cheese and nuts..but that takes some time to make…and sometimes there’s not time for all that jazz!

My point is, that you don’t need all these amazing additions in a salad every night!

Simple side salads are just perfect. Especially in the summer with a fabulous piece of grilled meat that just came off the grill.

Plus it’s Summer, so that means farmers market heaven.

No matter where you live you should have access to some sort of farmers market, which usually has AMAZING greens. Tasting way better than the greens you buy in the store.

Have some good quality greens, next know how to make a BOMB creamy balsamic viniagrette loaded with honey and cracked pepper. Honey to make it sweet, and cracked pepper, well because i’m obsessed with freshly ground pepper!

You’ll be surprised at the big smile you’ll have on your face after taking a bite of {Creamy Balsamic} Simple Side Salad!

I did garnish this salad with a little red onion, just to make it look more pretty! Totally optional.

Also, when you make this…don’t be a stickler on the measurements. I encourage you to get to the point where you don’t measure a salad dressing like this. Instead learn the ratios and what’s in it!

Here’s the recipe, ENJOY my friends :)

{Creamy Balsamic} Simple Side Salad

{2 Servings}

  • 2 Tsp. Grainy Dijon Mustard
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 Tbsp. Balsamic Vinegar
  • 1 Tsp. Honey
  • 1 pinch of salt
  • TON of freshly cracked pepper
  • 4 C. Greens (I used mixed spring greens)
  • Thinly sliced red onion (optional)

1. It doesn’t matter the order you mix it in, however I usually do it in this particular order. First in a small bowl, add dijon mustard. Add olive oil, balsamic and honey. Whisk together. Add salt. Add pepper. As you can see I didn’t say a specific amount. I like to put about 1/4-1/2 Tsp. or so. Be generous. Taste test it, add more accordingly. Whisk it all together as best you can!



2. Next, mix the dressing with the salad before serving. Add only as much as you want. Don’t put too much. I also garnish a little on top too! Slice up some red onion to garnish if you want. Remember it’s supposed to be a simple salad, so don’t go crazy!

    I love these simple salads too! Seems I’m always serving them up next to what I make for dinner. Your balsamic dressing sounds perfect! I have been using dijon mustard, but I should totally try grainy mustard.

      I wish I had lettuce in my backyard! Sadly, I don’t have a garden! Someday though for sure. I love the idea of eating out of it, but not so sure about all the work that goes into it! haha! Thanks, Chris!
