Salads should never be dull!! This Blackberry Spinach Salad with Coconut Citrus Dressing has a variety of flavors and textures – blackberries, avocado, red onions, pecans and feta. Finished with a homemade coconut citrus dressing which only takes a minute to whip up – coconut oil, lemon, orange, honey and mint.
I know it’s still far far from blackberry season….OH WELL.
Blackberries are just pure bliss in my mind. They have that tartness I adore, but more sweet than a raspberry.
I have fond memories picking them as a child in the woods…which is one of my favorite things to do in the Summer by the way!! I’m such a dork, I know! Do you go berry picking??
My grandparents always took my sisters and I berry picking. We’d pick strawberries, raspberries, blueberries….you name it. I probably love it so much because you get to eat them as you pick!! You know, pick one, eat one 😉
I’m a salad person and sometimes I get stuck in a rut with making the same kind of salad all the time….snooze fest.
I actually posted another berry salad not too long ago – Triple Berry Arugula Salad. However, this one is COMPLETELY different. Different greens, berries, veggies and the dressing.
Coconut oil is my favorite oil for salad dressing right now. It has such a pleasant flavor and unbelievably healthy for you! I also used it in Soy Ginger Coconut Oil Salad Dressing recipe..which is another goodie!
This coconut citrus dressing has that buttery coconut flavor from the coconut oil, a nice tang from the fresh lemon and orange juice, a little honey to sweeten and mint leaves. The mint definitely adds a little something extra to it!
This salad would pair extremely well with grilled chicken…or really any grilled meat for that matter.
So sad that I still haven’t made anything on the grill yet this season. Should be changing soon though because this week it’s supposed to be in the 70s in MN!!! WOOHOOO!!!

Blackberry Spinach Salad with Coconut Citrus Dressing
- 2 C. Spinach
- Handful of Blackberries
- Handful of Pecans
- Handful of Feta
- 2 Tbsp Red Onion
- 1/2 Avocado
Coconut Citrus Salad Dressing
- 1 Tbsp. Coconut Oil
- 1/4 Orange juiced
- 1/2 Lemon juiced
- 1/2 Tsp honey
- 2-3 Mint Leaves
2. Make salad dressing. First squeeze lemon and orange juice in small bowl. Chop up mint leaves and set aside. Take coconut oil in separate bowl, if not liquid – put in microwave until melted. Whisk coconut oil and citrus juices. Whisk in Honey. Lastly add mint leaves. Put on salad immediately. Sometimes coconut oil hardens back up quickly, totally normal.
So refreshing, eh?
I was kind of surprised how well blackberries and avocado go together!!
I’m starting to thing avocado just goes with everything!
