Cinco de Mayo is almost here!! AND Mexican food is a guilty pleasure of mine!!! So naturally, I’m thrilled to share Mexican inspired recipes in honor of Cinco!!!!
I can sit and inhale chips and salsa for days…no really. I can.
and that white cheese dip at Mexican restaurants. Don’t even get me started. HOLY GOODNESS! I try to avoid ordering it at all costs…way too addicting :O
I don’t know what it is about Mexican food that is SO unbelievably good. Maybe it’s the mixture of chili peppers, onion, tomato, lime flavors….Nothing beats a good taco, burrito, quesadilla…you name it. As long as it’s smothered in cheese, has salsa, avocado and a good meat..i’m sold.
It’s kind of ironic i’m making pico de gallo salsa though….because I used to HATE the tomato chunks in salsa. Emphasis on the word hate here.
I literally used to dunk my tortilla chip in and out of salsa at the speed of light, to avoid getting any chunks because heaven forbid I eat a chunk of tomato or onion. And I would only eat the Mild Pace Picante salsa…for those of you that know what i’m talking about. Man was I a salsa snob.
Since I hated the chunks in salsa as you can guess…I used to HATE pico de gallo. Chunky salsa city!!
But clearly my salsa preference has taken a turn. I absolutely love the chunks now. The chunkier the salsa the better 😉
Hence…why I loooove pico de gallo…
Pico de gallo can get kind of boring though, which is why I added one of my all time favorite things…AVOCADO.
Avocado makes everything better, doesn’t it??
It’s funny because all the things in this pico de gallo with avocado recipe is in guacamole.
This salsa is great to whip up for Cinco De Mayo, any party or a random night of the week!
It’s quick, easy to make and super fresh. I still love salsa in a jar, but pico de gallo has a special place in my heart <3
Here’s the recipe, Enjoy 😉
Pico De Gallo with Avocado
- 2 Beefsteak Tomatoes Diced (or any other kind – about 2 C. diced)
- 1/2 Onion Diced
- 1/2 or 1 Jalapeno Minced (depending on spice level)
- 2 Garlic Cloves Minced
- 2 Tbsp. Chopped Cilantro
- 2 Limes Juiced
- 1 Avocado Diced
- Salt and Pepper to taste
1. First take a medium bowl out. Wash all vegetables thoroughly. Dice tomatoes and onion. Mince the Jalapeno (remove seeds) and garlic. Chop the Cilantro. Add all of these ingredients to the bowl except avocado. Juice both of the limes into salsa. Gently mix until combined.
2. Lastly, dice avocado by simply cutting it while still in skin. Using a spoon dig out diced avocado, add to salsa. Carefully fold in avocado chunks into salsa just until combined. You don’t want the avocado to turn into mush.
