Wanna know how much I loooove pistachios???
Yeah, you don’t wanna know, because it’s kind of embarrassing how excited I am to blog about them.
For the longest time I never thought anything of pistachios…
I would see people eating them out of the shells, and never really gave them a try…blah, blah blah….
But then I lived in Europe, and my life was changed forever!
You guys, SOOO many things in Europe are flavored with pistachios. I’m talkin’ cakes, tarts, cookies, macaroons, breads GELATO….and anything else you can guess.
My favorite pistachio food was Gelato. Shocking I know….
I ate SOOO much of it. Especially in Italy.
Anyways, I had been thinking lately of how much I miss eating them! Cause you know…these are the kinds of things on my mind..haha!
Since I have been on a frozen banana rampage, I have been making a lot of banana “ice cream.”
If you haven’t had it, frozen bananas with a little milk added, become creamy just like ice cream…with much less guilt 😉 Plus you can add different things to it like cocoa, peanut butter, fruit…etc. Pure amazingness let me tell you…
So then I had a bright idea of adding my beloved pistachios to the frozen banana cream, to create a more figure friendly version of pistachio gelato!
I used almond milk, raw honey to sweeten, almond extract and of course pistachios!
And viola…SO smooth and satisfying!
Creamy, sweet and pistachio flavored…
Time for a little happy dance because i’m so of this proud!
It did take a few times of making it to get the right flavors and consistency…but I finally got it right!
Here is the recipe, hope you enjoy it as much as me 😀
Pistachio Frozen Banana Cream
- 1 Frozen Banana
- 1 tsp. Raw Honey
- 1 Tbsp. Pistachios (I used unsalted, either is fine)
- 1/2 tsp. Pure Almond Extract
- 3-4 Tbsp. Almond Milk
2. Start with adding 3 Tbsp of almond milk…only add more if necessary. Blend in blender until smooth. Might have to pulse, and stir it a few times. Be careful not to add to much milk to keep consistency of ice cream. Serve immediately. You can put in freezer, but it hardens too much making the consistency not like ice cream.
